Because as the moon moves around earth the sun lights up different parts of it

The Moon appears different every night due to its phases, caused by its orbit around the Earth and its position relative to the Sun. The full cycle takes about 29.5 days and includes various phases like new moon, first quarter, full moon, and last quarter. Each phase changes what we see illuminated on the Moon's surface from Earth.
